SUMMARY:Enostesia in Blue al Cavatappi: le primizie de “Le Falene”
DESCRIPTION:Formazione musicale: Antonello Marafioti (piano)\, Nino Pellegrini (contrabbasso)\, Marco Simoncini (batteria)\, Klaus Lessmann (sax)\, Emiliano Loconsolo (voce e direzione artistica). \n\n\n\nVenerdì 19 maggio\, al Cavatappi\, torniamo in orario serale (20:30) per lasciarvi liberi nelle gite domenicali\, sperando che il meteo le favorisca. Si tratta dell’ultimo appuntamento della rassegna autunno/primavera 2022/2023 e vogliamo stupirvi con effetti speciali! Incontrerete tre inedite sorprese: una Cantina giovane ma già a livelli di eccellenza ampiamente riconosciuti (tutti i vini in degustazione hanno ricevuto almeno 90/100 da James Suckling) e una formazione musicale italo/tedesca per una performance sicuramente di livello internazionale. Spieghiamo un po’: la cantina protagonista è Le Falene\, realtà recente (ha esordito nel 2016) e ancora piccola\, ma con lo sprint di un razzo. Merito certamente dei due fondatori: Vincenza Folgheretti\, colonna portante dell’enologia italiana\, consulente di rinomate Cantine sia in Italia che all’estero\, e Massimo Casagrande\, agronomo e direttore di importanti Cantine come Castellare di Castellina e Rocca di Frassinello. L’unione di competenze tecniche e strategiche di altissimo livello ha portato alla concezione di vini molto importanti e di sicuro impatto che si stanno facendo conoscere e apprezzare nel mondo\, e che\, per paradosso\, a oggi sono più noti all’estero che in Italia: è proprio il caso di farli conoscere al pubblico di CantinaJazz! La formazione musicale è anch’essa un’anteprima: Antonello Marafioti è un pianista italiano di origine\, ma da tempo berlinese di adozione\, mentre Klaus Lessmann\, sassofonista\, è tedesco di origine ma senese d’adozione. In mezzo a questo crossover mitteleuropeo\, il nostro direttore artistico Emiliano Loconsolo\, che si divide equamente tra Pisa e Berlino. Insieme a Nino Pellegrini al contrabbasso e Marco Simoncini alla batteria\, creeranno un sound internazionale adeguato a dei vini nati certamente per rappresentare il territorio\, ma incontrando il gusto planetario. E\, come terza sorpresa\, l’amaro Sesto Senso\, gloria locale (nasce a Calci) che ha conquistato un podio mondiale: è dello scorso Aprile la medaglia di bronzo al World Liqueur Awards\, anch’esso per la prima volta sul palco di CantinaJazz! \n\n\n\nTre i vini in degustazione\, tutti accomunati dalla grande struttura (il Rosato ha 13.5 gradi\, i rossi sono entrambi a 14.5%\, quindi: parsimonia) e dalla prorompente personalità\, profondamente diversa dall’uno all’altro. \n\n\n\nMa veniamo ai dettagli della degustazione in cinque tappe\, con altrettante specialità della rinomata cucina del Cavatappi\, che negli appuntamenti precedenti si è sempre fatta valere e che per quest’ultimo appuntamento vuole lasciare impresso il ricordo! \n\n\n\nDopo un long drink che\, insieme a dei canapè al formaggio con granella di pistacchio e mandorle tostate\, e alla sigla di CantinaJazz\, Shiny Stockings\, rappresentano il benvenuto agli spettatori man mano che prenderanno posto\, si parte con il Le Falene Rosato 2022\, a base di sangiovese vinificato in rosato\, che per forza ed espressività non ha nulla da invidiare ai meritatamente celebri rosati salentini e\, nel piatto\, un fiocco di lonza al ginepro\, marinato ai pepi bianco e rosa\, con maionese al latte e carpaccio di zucchine.  Si prosegue con Le Falene Rosso 2018\, blend di cabernet franc e syrah\, rosso di grande beva e personalità internazionale fin dall’uvaggio\, che viene accompagnato da un risotto all’antica (con fegatini di pollo) alla crema di caprino e noce moscata. Si approda a Le Falene Sangiovese 2017\, alfiere della rappresentanza del territorio: un sangiovese di grandissima struttura\, potenza e persistenza\, ma molto gentile in bocca\, così che la beva resta elevata pur con questa caratura\, e\, sempre per rimanere nel territorio\, nel piatto troveremo un filetto di maiale al vino rosso e pepe nero\, con patate e carote al forno. \n\n\n\nIl momento finale sarà appannaggio del trio più intensamente aromatico di tutta la stagione: l’amaro Sesto Senso\, fresco di titolo mondiale\, con le sue nuances di arancia amara e di erbe\, va a sposarsi con una mousse di cioccolato all’88%\, l’unica che possa starci alla pari per succulenza e aromaticità\, e il  Caffé Trinci\, altrettanto premiato aromatico ed esotico: quale modo migliore per chiudere in bellezza tutta la stagione? \n\n\n\nCome di consueto\, il servizio dei vini è a cura di AIS-Pisa\, la loro presentazione\, oltre che all’enologa Vincenza Folgheretti\, loro creatrice\, è affidata ai sommelier Alessandra Bertolotto e Ivan Bertozzi. \n\n\n\nQuesto evento è stato organizzato grazie al determinante supporto della Fondazione Pisa\, in convenzione con il Corso di Studi in Viticoltura Enologia dell’UniPI\, la delegazione AIS Pisa\, del club Cavatappi-SpiritoJazz e ha il patrocinio del Comune di Calcinaia. \n\n\n\nLa partecipazione all’evento prevede la prenotazione online e il versamento di una quota di 45 €/persona\, onnicomprensiva (degustazione\, pranzo e concerto) e non frazionabile.
